In 2021, Shayna left everything behind.
Twelve years in Los Angeles. An eight-year relationship that ended. A career as a chef and holistic nutritionist that was supposed to be about healing but was actually depleting her.

Why preorder instead of buying when it's ready?
Shayna's Kitchen is a small farm, not a corporation. There's no cash flow to fund an entire harvest upfront: labor, milling, bottling, shipping all happen before a single sale. Preorders allow Shayna to plan exactly how much to harvest (no waste, no excess inventory) and ensure everyone who wants the oil gets it. You're not just buying a product, you're funding a harvest and becoming part of the process.
When will I receive my oil?
January 2027. Shayna harvests in October 2026, presses immediately, lets the oil rest for 2 weeks, bottles in November, and ships in December. Transit from Italy to the US takes about 8 weeks. Your oil will be 60–90 days old when it arrives, compared to the 12–18 months most supermarket oils have been sitting around.
Why does it cost more than supermarket olive oil?
Because it's not the same product. Most grocery store "extra virgin" olive oil is diluted, oxidized, mislabeled, or outright fake. Shayna's is single-estate, hand-harvested, cold-pressed within hours, lab-tested for polyphenol content, and shipped fresh.
Our bottles were $58 for previous harvests, and we've adjusted to $78 for 2026. Here's the breakdown: The EU to US tariff on olive oil is currently 15%, which adds approximately $13 per bottle in import costs alone. Additionally, demand has significantly outpaced our small production. This is a very boutique, single-estate farm producing a finite amount of oil each year. We could expand, but that would mean compromising on the hand-harvesting, the pressing timeline, the quality control. We won't do that.

What if I don't like it?
If you've never tasted fresh, high-polyphenol olive oil, it will taste different than what you're used to. It's peppery. It burns your throat. It's grassy, bold, alive. That's not a defect, that's what real olive oil tastes like. If you genuinely don't like it after trying it properly (on its own, with good bread, as a finishing oil), reach out to Shayna's team. Can I gift this to someone?

How should I store it once it arrives?
Dark glass protects from light (Shayna's oil comes in dark bottles). Store in a cool, dark place, not next to the stove, not in direct sunlight. Keep the cap tight to minimize air exposure. Use within 6 months of opening for peak freshness, though it will stay good for up to a year if stored properly.
What does "unfiltered" mean?
Shayna doesn't remove the natural sediment that settles at the bottom of the bottle. Filtering makes oil look clearer and more aesthetically pleasing, but it also removes flavor compounds and nutrients. Unfiltered oil is cloudier, richer, and more nutritious. The sediment is a good thing, it's proof nothing was stripped out.
Can I cook with this?
You can, but you shouldn't, at least not for high-heat cooking. Heat above 180°C destroys polyphenols. Use it as a finishing oil: drizzled on roasted vegetables after they come out of the oven, tossed with pasta off the heat, whisked into salad dressings. Save the cheaper stuff for sautéing. Save this for when it can actually shine.
Is this actually better for my health, or is that just marketing?
It's science. High-polyphenol olive oil (250+ mg/kg) has been studied extensively for its anti-inflammatory, cardiovascular, and metabolic benefits. Shayna's oil exceeds that threshold at 500+ mg/kg.
