Every drop comes from Shayna's grove in Umbria. Frantoio, Moraiolo and Leccino olives, grown organically on mineral-rich soil. One farm, one harvest, one story. Never blended.

Harvested in early October, when polyphenols, flavour and healing power peak. Most producers wait for a bigger yield and accept a lesser oil. We do the opposite.

Pressed within hours
The moment an olive leaves the tree, oxidation begins. Shayna's team harvests, transports and presses the same day, three to six hours from branch to press. Most operations wait one to three days.

Cold-pressed, unfiltered, raw
Pressed below 27 degrees to keep the enzymes, antioxidants and that vivid green. Bottled unfiltered, because filtering removes flavour and nutrients along with the cloud.

About 120 days from tree to table
Most olive oil is 12 to 18 months old before you buy it. After harvest, pressing, shipping and import, Shayna's reaches your door in about four months. That is the difference between fresh and forgotten.
